Angelica
Being a part of the parsley family, angelica offers a strong celery-like flavour which makes it the perfect add-in to your Caesar or Bloody Mary. The lemon backdrop gives added complexity.
Aromatic Bitters
Dillon's Aromatic DSB bitters are a hard working, multi-purpose bitters. An aroma of cherries, with overtones of vanilla, cloves, allspice, and cassia make these ideal for any application with bourbon, rye, spiced rum, mezcal or tequila. Especially excellent in a Manhattan.
Black Current
Dillon's Black Currant bitters are a light fruity bitters created from only natural botanicals and fresh black currants. A Niagara wine grape base is flushed with black currants sourced from Peter Dillon’s home garden, making this a perfect addition to a gin & tonic with muddled fresh currants, or a bramble. Also ideal to pair with vodka, sours, and tropical cocktails.
Cranberry
Dillon's Cranberry bitters are made using only cranberries sourced from Bala, Ontario. They offer a subtle anise and white-pepper flavoured background. A perfect bitters for all of your Christmas punches and cocktails.
Fennel
Dillon's Fennel bitters are made using fennel grown in Dillon's own garden, along with select botanicals. A strong, herbaceous sensation of fresh cut grass and fennel root is a perfect pair to botanical spirits like gin, vodka and tequila. Use in a savoury Martini, a Bloody Mary or Caesar, or bring unexpected balance to a sweet, tropical cocktail like a Mai Tai or Daquiri.
Ginger
Dillon's Ginger bitters are created from both fresh and dried local ginger and other natural botanicals. Huge up-front ginger, with a subtle background of fennel, cherry and smoke. Not only is it great in cocktails, but also a great addition to your veggie stir-frys or baking.
Hot Pepper
Dillon's Hot Pepper Bitters are made using peppers from Dillon's own gardens; habanero, jalapeño and Hungarian hot wax peppers. Combined with the fragrant and spicy aroma of red peppercorns and long pepper plus the tartness of lemon. An obvious choice for the classic Caesar or Bloody Mary, but also a great way to add heat without altering flavours. Try these in a margarita and fruit-based cocktails.
Lemon
Dillon's Lemon bring a vibrant lemon scent and taste, with highlights of cardamom and coriander among the spices adding flavour. Perfect with any gin-based cocktails, and excellent in cooking with chicken, fish, asparagus & vinaigrettes.
Lime
Dillon's Lime bitters offer an intense bitters with lime up front, but coriander and red peppercorns shining in the background. Great with gin, tequila and vodka-based drinks.
Orange
Dillon's Orange Bitters combine sweet and bitter orange with local and exotic herbs including juniper, red peppercorns, and verbena. Their complex flavour profile mixes well with gin and vodka-based drinks, and especially rye.
Peach
Dillon's Peach bitters is a small batch, limited edition of Peach Bitters made with fresh Niagara peaches, basil, and vanilla on a Niagara wine grape base. A collaboration with us here at Cocktail Emporium, these bitters were specifically designed to do it all. Replace a standard citrus squeeze with a dash. Heighten a floral and fruity gin, bourbon sweet tea, or the classic old fashioned or whiskey sour. Also great in green iced tea or to liven up fruit salads and grilled chicken or fish dishes.
PearDillon's
Pear bitters start with fresh-pressed pear juice from local orchards, mixed with a blend of exotic and fragrant spices including fresh vanilla beans, allspice berries and others that still allow the delicate pear flavour to shine through.
Rhubarb
Dillon's Rhubarb bitters begin with a Niagara wine grape base, created from only local rhubarb and natural botanicals. Starting with fresh-pressed rhubarb juice from Dillon's own gardens, combined with a touch of star anise and ginger plus several other herbs to make a uniquely balanced bitter. Add a dash to gin, vodka, tequila, rye & gingers, Negronis and Tom Collins.
